Unveiling Culinary Magic: An Exclusive Interview with Deeba Rajpal

Kosmc: How do you start your day, usually?

Take the dogs out, brew some coffee, perhaps take a quick coffee morning picture, and collect flowers from the garden.

Kosmc: What is your favorite baking recipe, and why do you enjoy making it?

My eggless sponge recipe is an all-time favorite. All you need is a bowl and a whisk. You can scale it endlessly and it forms the base for most of my desserts.

Kosmc: What is your guilty pleasure snack?

Indian street food, paani puri. I don’t have a sweet tooth. Savoury is my first love!

Kosmc: If you could have one meal with a famous chef, Who would that be?

My tastes are very simple and plebeian, so I’m not really sure. I’d go with the flow I guess.

Kosmc: What is that one travel destination that has been on your bucket list?

Istanbul

Kosmc: Do you have any favorite baking ingredients or tools that you consider essential in your kitchen?

Good quality cocoa powder, couverture chocolate, and ghee are essential. A sturdy whisk, spatulas, and maybe a hand blender, are basics I always value!

Kosmc: As a cookbook author, what motivated you to write about eggless baking specifically?

I think it was the pandemic when I had loads of time and there were so many requests for eggless recipes. It was something I had never considered possible. Once I began, there was no looking back. I don’t think I’ve ever had more fun baking, actually baking so unconventionally. For me, I’ve done away with standard procedures like sifting dry ingredients separately, etc. Most of my recipes are one-bowl, whisk-together recipes, fuss-free and simple.

Kosmc: How often do you go shopping and where do you shop from?

I’m now a 90% online shopper. I step out only to buy fresh produce because I enjoy stopping by my local bazaar to see what’s new in season etc. The rest is ordered online. I know the brands that work for me and the shops I get the best deals from.

Kosmc: Most underrated and overrated food in your opinion?

I think dessert tarts are quite underrated while macarons are quite overrated, but this is just me.

Kosmc: What role has social media played in your journey as a baking influencer, and how has it helped you connect with your audience?

I wouldn’t probably be baking and creating as much if it wasn’t for social media. It’s made me a better person, given me new insights and ideas, connected me to a brilliant community, and helped me think beyond my boundaries. The SM platforms allow you to engage with such a varied audience worldwide and is a fascinating and fulfilling experience.

Kosmc: What are your future aspirations or goals as a cookbook author, eggless baker, and influencer in the world of desserts?

Perhaps another dessert cookbook! I live each day as it comes, with no aspirations or ambitions. I enjoy what I do in my space every day and that’s enough to keep me going!
